Banana Nut Bread (using machine)
This vegetarian banana nut bread is a deliciously moist and flavorful treat, perfect for breakfast or an afternoon snack. Made with ripe bananas for natural sweetness and studded with crunchy walnuts or pecans, this bread offers a delightful combination of soft texture and nutty richness. Whether enjoyed warm with a bit of butter or on its own, this banana nut bread is a satisfying and nutritious comfort food! This recipe is used with an Oster Bread machine. You just have to combine the ingredients, then set it. Tip: keep all grains (like flour, rice, etc) in the freezer so you don't find critters in there. The low temperature kills all pests.
Ingredients:
1 -2 Ripe Banana
2 Farm Eggs
1 teaspoon Non-alcoholic Vanilla
1 teaspoon Salt
1 teaspoon Baking Soda
1/2 Cup Plant-based Butter
1/2 Cup Pecans OR Walnuts - crushed
1 Cup Cane Sugar
1 Cup All Purpose Flour
Directions:
1. According to Bread Machine instructions, always put the liquids in the machine first. In this case, we put melted Soy Butter, eggs, vanilla, and smushed banana into the machine. This is called the "wet ingredients".
Next are the "dry ingredients: flour, salt, baking soda, and cane sugar.
3. This is a clippette of the Banana Nut Bread while it is stirring. You may have to scrape off the sides to get a "clean" surface and a "clean" loaf.
4. Voila! You can eat it warm! Please note that you can also use a sweet potato bread; just don't forget to remove the skin.
