Wild Rice & Chikn Soup
We're baaaack! We've been in the test kitchen over the past couple years, running to and fro across the cookbooks of the world, so walk with us on an exotic journey. I know it's been a minute...or two, but there have been so many meat alternatives out there since we last "spoke" and we must discuss it. For those of you who thought you were doing well, buying meat alternatives instead of meat, I congratulate you with this warning: TEMPERANCE. Temperance is the key. I know how easy it is to just buy a bag of chikn meat and pat yourselves on your back, but that bag of chikn meat can actually be more harmful than chicken. Why? Because that bag of chikn meat is actually ULTRA processed. And by definition:
Group 1 is unprocessed or minimally processed foods
Group 2 are culinary ingredients like olive oil, butters, salt, sugar
Group 3 are foods that are made by combining foods from groups 1 and 2, which are altered in a way that home cooks could do themselves. They include foods such as jam, pickles, canned fruit and vegetables, and homemade breads.
Group 4 typically have 4 or more ingredients. They tend to include many additives and ingredients that are not typically used in home cooking, such as preservatives, emulsifiers, sweeteners, and artificial colours and flavours. They generally have a long shelf life. They include French fries, hamburgers, sodas, potato chips - and you will notice that this food group has long-term health consequences
But, hey, as I said earlier, it's all about TEMPERANCE. If you divulge in meat alternatives occasionally, you should be fine. You should never eat them every day in the same way you should not eat French Fries every day. We will be looking at that again in the future. In the meantime, we have formulated recipes with EITHER Ultra Processed (Daring Chicken) OR Minimally Processed (Jackfruit) meat, so YOU can choose. This recipe calls for Wild Rice. Cooked Wild Rice has about 30 percent fewer calories than Brown Rice, as well as 40 percent more protein, fiber, potassium, and zinc for your information.

Equipment Needed: Pot, Whisk, Food Scissors OR Knife (optional - to shred the chikn), Measuring Utensils
Ingredients:
32 oz Vegetable Stock OR Vegetable Broth, 1 cup removed
1/4 Cup All Purpose Unbleached Flour
1 teaspoon Thyme
1 teaspoon Montreal Chicken Seasoning
2 Cups Water
1 Cup Brown Rice OR Wild Rice
2 Tablespoons Chikn Style Seasoning OR Montreal Chicken Seasoning
1 Cup Daring Chicken OR Cajun Chicken Chicken OR Jackfruit (shredded)
10-12 ounce California Blend OR Any Frozen Vegetable Mix
2 teaspoons Garlic, minced
2 Tablespoons Butter, plant-based
Directions:
1. Pour Vegetable Broth and Water into pot on High Heat.
2. Make a slurry of 1 Cup Vegetable Broth + 1 tsp Thyme + 1 tsp Montreal Chicken seasoning and Whisk. Add 1/4 cup Flour and Whisk again.
Pro Tip: Rub dried herbs between your fingers to activate the flavor. This releases the essential oils in them.
3. Meanwhile add to the pot, 2 Tablespoons of Butter + Chikn Style Seasoning.
4. After boiling, add Rice, Chikn, Vegetables, and Slurry mixture.
5. Reduce heat to simmer, cover 30 minutes.
6. Serve with crackers or vegetable sticks and Enjoy!
