Roasted Veggie Shish Kabobs


Shish kabobs are wonderful for barbecue and any grilling recipe. If you do not want to take the trouble to break out the charcoal and pit, here's a recipe that you can make all year. Roasted Veggie Shish Kabobs. The flavor is in the oil: olive oil, rosemary, thyme, and oregano make a juicy combination - and the aroma is something to inhale. Using a Reynolds Oven Bag seals in the juices and maintains the full nutrition of the vegetables. These bags can withstand heat up to 400 degrees.

Cook Time: 45 Minutes

Total Time: 1 Hour

Equipment Needed: Shish Kabob Sticks/Skewers, Knife, Reynolds Oven Bag, Peeler, Pot

Ingredients:

2 Squash, Sliced

2 Zucchini, Sliced

2-4 Tomatoes, Sliced or whole Cherry/Grape

2-4 Onions, Sliced

2 Potatoes, Peeled, Sliced

Opt: Bell Peppers, Eggplant

Drizzle Vegetables with Olive Oil, Lemon Juice, Rosemary, Thyme, Oregano, Sea Salt before cooking.

Directions:

1. Boil the Potatoes until tender (Optional: slice the potatoes without boiling them).

2. Meanwhile, slice the vegetables and set aside. Once the Potatoes are tender and cool, skewer them through the center, alternating vegetable slices. Sprinkle one Tablespoon on the bottom of the Oven Bag to create a gravy and prevent the bag from bursting during cooking.

3. Place them in the Oven Bag. Cook in oven at 350 degrees for 30-45 minutes.

4. Eat and Enjoy!
