Sweet Potato Pecan Pie
This sweet potato pie is a rich, creamy dessert that captures the essence of classic comfort food. Yields (6) 9 inch deep dish pies.
Ingredients:
12 Sweet Potatoes
4 Cups Cane Sugar
1 Cup Soy Butter
2 teaspoon Coriander
1- 1/2 Cardamom
3 teaspoons Non Alcoholic Vanilla
1/2 Cup Nut Milk
3 Cups Pecans, roughly chopped
Directions:
1. Boil the sweet potatoes, submerged fully in water (I use a 32 quart container to boil them) for about one hour or until they cut through easily through with a knife.
2. Remove the sweet potatoes from water and discard the water. Allow them to cool for about an hour. Then remove the skins.

4. Pre-heat the oven to 350 degrees to pre-cook the crusts (10 minutes or until golden brown).
5. Remove the "hair" strings on the hand blender, washing it every so often. Remove any dark spots in the pie mixture. Rinse the blender until the number of "hairs" have been reduced. This may take several rinses (3-5).
6. Add the cane sugar and blend. Then add the soy butter and blend.
6. Add the coriander and blend. Then add the cardamom and blend.
7. Add the vanilla and blend. Then add the rice milk and blend.
8. Put strips of foil on the edges of the pie crusts so the crust does not burn. Using a ladel, pour the mixture into to pre-cooked pie crusts.
9. Sprinkle the pecans on the pie.
10. Cook the pie for 1 hour on 350 degrees. Then allow them to cool for at least one hour. To stack them, use foil, covering each pie, then stack them using cardboard pieces like so:
11. To re-heat them, put them in the oven on 150 degrees for about 30 minutes.
