Spicy Sweet Potatoes

I was using some sweet potatoes from my garden, so I just mixed up some flavors that I thought which my palate would please. And this is what I came up with (I experiment flavors ALOT). I used a recipe that I found online and modified it greatly, but the recipe called for an oven temperature of 500 degrees for 10 minutes. As you can see, THAT was a MISTAKE. It would not burn if I would have cooked it at 350 degrees as I usual do. Other than that, the flavor is excellent! So cook yours at 350 degrees for 15 minutes. I'll do better next time. This recipe is for 3 serving, so just multiply for each serving.


Ingredients:

3 Whole Sweet Potatoes, skinned, ends cut off

1 Tablespoon Olive Oil

1/4 teaspoon Paprika

1/4 teaspoon Thyme

1/4 teaspoon Oregano

1/4 tespoon Cumin

pinch Cayenne

pinch Pink Himalayan Salt (or) Sea Salt

Directions:

1. Wash sweet potatoes and cut off the tip ends.

2. Skin sweet potatoes and cut into wedges.

3. Put olive oil and potato wedges into a bowl.

4. Add all ingredients: paprika, thyme, cumin, oregano, cayenne, and salt and toss, coating the wedges.

5. Spread them out on foil OR parchment paper.

6. Cook for 15 minutes on 350 degrees (the picture above was cooked at 500 degrees and it caused my oven to smoke after 5 minutes, so don't DO THAT!). Serve with vegetarian cream chesse OR honey.
