Tofu "Eggs": A Flavorful, Protein-Packed Scramble

These tofu "eggs" are a vibrant, plant-based alternative to scrambled eggs, made with crumbled tofu and seasoned with turmeric for a golden hue and earthy flavor. The addition of ChikN Style Seasoning brings an egg-like taste, while a blend of herbs and spices creates a savory, satisfying dish. Packed with protein and quick to prepare, these tofu "eggs" are perfect for a nutritious breakfast or brunch. Ingredients:

1 pound Firm Tofu, drained

4 Green Onions, diced

1/2 Red Onion OR Yellow Onions, finely diced

1/3 Cup ChikN Style Seasoning

1/2 teaspoon Garlic Powder

1/4 teaspoon Basil, dried

1/2 Tablespoon Turmeric, dried

1 teaspoon Mrs. Dash

1/2 teaspoon Cajun Seasoning

2 Tablespoons Corn Oil

Dash Cayenne

Pinch Pink Himalayan Salt (or) Sea Salt

Handful Spinach

Handful Cherry Tomatoes, sliced

Directions:

  1. Place tofu in a large bowl, break up tofu by hand. Cut up Red Onions, finely diced.

  2. Add the Green Onions, ChikN Style Seasoning, Basil, Turmeric, Garlic Powder, Cayenne, Mrs. Dash, Cajun Seasoning, Salt, and stir.

  3. Put Corn Oil on Medium Heat in a cast iron skillet. Place Tofu mixture in the skillet, allow it to brown before turning (about 10-15 minutes). Serve hot or warm. Refrigerate for up to one week.

  4. Eat and Enjoy!

1-1/3 Cup Nutritional Yeast Flakes

3 Tablespoons Onion Powder

2-1/2 teaspoons Garlic Powder

2 Tablespoons Sea Salt OR Pink Himalayan Salt

1/2 teaspoon Celery Seed OR Celery Flakes

1-1/2 Paprika

1 Tablespoon Parsley Flakes
