Vegetarian Recipe of the Day: Naturally Warm You Up Chili
This vegetarian chili will warm you up FAST! It is spicy, delicious, and full of flavor. This recipe makes 20 servings, so make it freeze it separate containers. See Nutrition Information below*
Preparation Time: 20 minutes
Cooking Time: 50-60 minutes
Ingredients:
2 24 oz Boca Veggie Ground Crumbles (or) Quorn Grounds
1 T Chopped Garlic
4 cans 6 oz (or) 8 oz Tomato Paste
2 Red Bell Pepper, chopped
3-5 cans Kidney Beans, dark red (preferably Bush's with chili gravy)
1 Onion, chopped
4 T Vegetable (or) Corn Oil
1 Jalapeno, chopped
2 Boxes Wick Fowler's 2 Alarm Chili Kit (or) Carroll Shelby's Chili Kit
Directions:
1. Place the BocaVeggie Ground Crumbles in the pot. Add the seasoning packets: chili powder, oregano, paprika, garlic, cumin, salt.
2. Heat the Oil on Low Heat while you are cutting all of the ingredients.
3. Cut up the Red Bell Pepper, Onion, and Jalapeno.
4. While you were cutting ingredients, the meat was breaking down. If necessary, break down the meat into smaller pieces. Then add the Red Bell Pepper, Onion, and Jalapeno like so:
5. Turn the Heat on Medium for 5 minutes and add the Chopped Garlic.
6. When meat is warm, add the Kidney Beans (based on your preference on how many beans you want in your chili), Tomato Paste.
7. Add Water (6 oz/8 oz per can of Tomato Paste). Do not add the Masa or Cayenne yet.
8. Cover and Simmer for 30 minutes, stir occasionally and Low Heat.
9. Add a dash of Cayenne and simmer 15-20 minutes at Low Heat. Serve and enjoy!
