Vegetarian Recipe of the Day: Spicy Veggie Lo Mein
This recipe is full of vegetables and fiber (we use whole wheat noodles instead of white noodles). Each serving has 214 Calories*.
Ingredients:
For the Noodles
4 oz Whole Grain Thin Spaghetti
Pinch Sea Salt
Lo Mein
3 T Corn/Vegetable Oil
24 oz Stir Fry, Frozen
1 C Corn Kernels, Frozen
2 C Broccoli Florets, Frozen
Pinch White Pepper
4 T Soy Sauce, Vegetarian
1 1/2 t Chili Oil
2 t Sesame Oil
Pinch Sesame Seeds (opt)
Directions:
1. Follow directions on Spaghetti. Add a pinch of Sea Salt to the boiling water.
2. Drain Spaghetti and set aside.
3. Turn Oil on Medium Heat f0r 5 minutes, then add Stir Fry.
4. Add the Corn and stir.
5. Add the Broccoli and stir.
6. Then add White Pepper.
7. Stir all ingredients thoroghly.
8. Add the Spaghetti noodles: like so, trying not to break the noodles:
9. Then add the Sesame Oil and stir.
10. Serve warm with Chinese Biscuits and top with a few Sesame Seeds. Just Search for Chinese Biscuits on the website.
