Naturally Meatloaf: A Hearty, Flavor-Packed Plant-Based Classic


This vegan meatloaf offers a comforting, flavorful twist on the classic dish, made entirely from plant-based ingredients. Combining vegetables and savory seasonings, this loaf is baked to perfection with a tender, meaty texture and a delicious, tangy glaze on top. Packed with flavor and nutrition, it's a satisfying and wholesome dish ideal for weeknight dinners or special occasions. Whether served with mashed potatoes or your favorite sides, this vegan meatloaf delivers all the hearty goodness of the original without any animal products!

Prep Time: 30 minutes

Cook Time: 1 hour 30 minutes

Total Time: 2 hours

Equipment Needed: Casserole Dish, knife, large bowl, can opener, cutting surface

Ingredients:

1 Cup Red Bell Pepper, chopped

1 Cup Green Bell Pepper, chopped

1 Cup Onion, chopped

1 Can Tomato Sauce

1 bottle Pasta Sauce, your favorite

1 Tablespoon Parsley Flakes, dried

1 teaspoon Thyme, dried

1 teaspoon Oregano, dried


Mock Ground Meat (alternative to the Boca Hamburgers)

Ingredients:

  • 4 cups      Water (boiling)

  • 2 cups      Bulgur Wheat

  • 1 cups      Pecan Meal

  • 1 tsp       Garlic Powder

  • 2 Tbs      Onion Powder

  • 3 Tbs      Gomasio (toasted sesame seeds – grounded)

  • 1 Tbs      Parsley

  • 2 tsp      Herbs N’ More

  • 1 Tbs      Parsley

  • 1¼ tsp   Sage

  • ¼ cup     Nutritional Yeast Flakes

Directions: 

1.     Add all ingredients to boiling water and stir and simmer for 10 minutes.

2.     Remove from heat and let stand for 15-20 minutes.

3.     Spread evenly onto oiled or parchment paper lined cookie sheet and bake at 350º until browned.

4.     Remember to turn mixture every 15-20 minutes.

Directions:

1. In a large bowl, put vegetables and seasoning (except the parsley) in the bowl.

2. Then add the Boca patties in the bowl and REALLY mix the flavors together by hand (you can use restaurant gloves or a fork if you are squeamish, but try to REALLY mix the flavors together), adding half of the pasta sauce in with the meat and vegetables.

3. Place mixture into casserole pan, shape into loaf.

4. Pour tomato sauce down loaf, allowing it to fall down sides.

5. Sprinkle Parsley flakes down loaf.

6. Place loaf into oven at 350 degrees for 60-90 minutes or until warm in the center (depending on the thickness of the loaf). For this double portion size it took 1 hour 30 minutes.

7. Eat and Enjoy!
