4 Servings
Ingredients:
1 Apple, peeled, cored (I used Pink Lady)
1 Tablespoon Vegan Butter (I used Earth Balance)
1 Tablespoon Brown Sugar OR Cane Sugar (I used Brown Sugar)
1 teaspoon Coriander
1/4 teaspoon Cardamom
1 teaspoon Pectin (Used as a thickener)
4 Egg Roll Wrappers
Powdered Sugar for Dusting
Directions:
1. Peel and Chop Apples (pieces should be about the size of peas). Saute' apples in Butter, about 5-7 minutes.
2. In a separate bowl mix Brown Sugar, Pectin, Cardamom, Coriander.
3. Then add Apples to Sugar Mixture. Stir 1-2 minutes or until mixture is thick.
4. Remove from heat.
5. Divide Apple mixture between Egg Roll Wrappers. Roll Egg Rolls and seal with water if needed (instructions for how to roll egg rolls can be found on the outside of the egg roll wrapper, usually).
6. Fry in hot oil until golden brown on both sides (1-2 minutes).
7. Drain on paper towels.
8. Dust generously with powdered sugar. Eat and Enjoy!
