Callaloo St Lucia Style


Callaloo is a plant that grows in the Caribbean Islands including St Lucia and other tropical places in the world such as Puerto Rico, Jamaica, Dominican Republic, Trinidad, Virgin Islands, Philippines, Florida, Africa, Asia, and the Pacific. It is also termed as Amaranth and serves as vegetables, herbs, cereals, ornamentals, as well as grains. It is believed to consist of about 70 species. A 1/2 cup of cooked Callaloo leaves contains less than 50 calories, 6.5 mgs of fiber, over 300 mgs of calcium, over 500 mgs of potassium, over 3 mgs of iron, over 3.5 mgs of protein, and some sodium. Callaloo contains 4 times the amount of calcium found in broccoli and twice the iron. It also contains Vitamin C for boosting your immune system, B Vitamins for good mood and vitality, and Vitamin A which is a great antioxidant. Prep Time: 10 Minutes

Cook Time: 10 Minutes

Total Time: 30 Minutes

Equipment Needed: Pot with top, Knife, Measuring Utensils

Ingredients:

1/4 teaspoon Cayenne

1 teaspoon Garlic, Minced

1 teaspoon Mrs Dash (original)

1 Tomato, Chopped

1 Tablespoon Olive Oil

1 Tablespoon Water

1 teaspoon Thyme

4 Cups Callaloo, Chopped

Dash Pink Himalayan Salt or Sea Salt

1 teaspoon Better Than Boullion (Vegetarian) optional

Directions:

1. Put Olive Oil and Water in Pot on Medium Heat.

2. Cut up all ingredients.

3. Add Tomato and Seasonings.

4. Add Callaloo.

5. Cover for 10 Minutes. Eat & Enjoy!

Easy St Lucia Callaloo

Equipment Needed: Pot with top, Knife, Measuring Utensils

Ingredients:

8 Cups Callaloo, Rinsed

1 Tablespoon Olive Oil

1 teaspoon Cajun Seasoning

1/4 teaspoon Pink Himalayan Salt or Sea Salt

1/3 Cup Water

Directions:

1. Place Callaloo in Pot.

2. Add Seasonings.

3. Pour Water Over Callaloo Leaves.

4. Cover with tightly fitted Lid and cook for 15 minutes. Eat & Enjoy!
