Butter Pecan Cookies


Butter Pecan Cookies...yummy! Moist, mouth-watering (my mouth is watering even as I write this), comforting, delicious. These cookies are so quick to make, and stay soft and moist for months (2 months, actually) that it has quickly become a favorite for my family and friends. I've tried it with both plain All-Purpose Unbleached Flour and a mixture with All-Purpose & Whole Wheat Pastry (to try to make them healthier) and no one seemed to notice.

You can buy chopped Pecans in the stores, to save time, or you can use a Food Processor to chop them. This recipe is PACKED with PECANS and LOADED with BUTTER! When you look at the recipe, you will see WHY it is called Butter Pecan. Good thing this is Vegan Butter, not Cow's Milk Butter. For Vegan Butter is made from plant fats and Cow's Butter comes from animal fats. The less animal fat in your diet, the better for your health (for Nutrition Facts on Chopped Pecans, see below). These cookies are in the same category as Butter Pecan Ice Cream - hmmm, I wonder if they would taste good if I ate them WITH Butter Pecan Ice Cream??? Equipment Needed: 1 Large Bowl, Fork, Spoon, Measuring Utensils, Cookie Sheet

Ingredients:

2 Eggs or Egg Replacement

2 teaspoons Vanilla, Non-Alcoholic

1/2 Cup Cane Sugar

1 Cup Brown Sugar

1 Cup Earth Balance Vegan Butter, Softened

1/2 teaspoon Sea Salt OR Pink Himalayan Salt

1 1/2 teaspoon Baking Powder, Aluminum-free

(I also tried it with Baking Soda the 1st time and found it unnecessary the 2nd time, using ONLY the Baking Powder)

2 1/2 Cups All-Purpose Flour (Unbleached)

2 Cups Pecans, Roughly Chopped

Directions:

1. Mix all the Liquid Ingredients.

2. Mix all the Solid Ingredients.

3. Using a teaspoon, drop cookie dough onto an ungreased cookie sheet, spacing them evenly apart.

4. Bake cookies on 350 degrees for 10-12 minutes (do not overcook; they will continue to cook while cooling them).

5. Eat & Enjoy!
