Veggie Chikn Fajitas
We know that it has been a while - quite a while, actually - but hey, "better late than never"! Over the last few months we have "played" with many alternative meats. This one may be made of "processed meats", but it made the cut to share with you all. This meal is named "Veggie Chikn Fajitas" and we don't know how they made that meat so tender, but it sure is TENDER! We suggest you double the bell peppers; we wanted more in there and it stretches the meal from a meal for 4 to a meal for 6. Hope you enjoy!

Equipment Needed: Skillet, Measuring Utensils, Knife, Spoon
Ingredients:
1 Package of Daring Original Plant Chicken Pieces OR Tofu sliced, dried
1 Onion, Medium, sliced
1 Red Bell pepper, seeded, sliced
1 Green Bell pepper, seeded, sliced
Flour tortillas or brown rice, for serving
Toppings: avocado, cilantro, salsa
Sauce:
1/4 Cup Vegetable/Olive Oil
1/4 teaspoon. Cane Sugar
3 teaspoons Garlic, minced
1/4 teaspoon. Kosher/Sea Salt
2 Limes, juiced
1/4 teaspoon Paprika
1/4 teaspoon Cumin
1/2 teaspoon. Chipotle/Chile Powder (optional)
Directions:
1. In a small bowl, whisk together vegetable oil with the garlic, salt, chipotle chile powder, ground cumin, paprika, sugar and fresh lime juice. Set aside.
2. Add bell peppers & onions to the skillet, covered (until veggies tender) on Med-High heat.
3. Add the sauté oil and stir, coating veggies and add chikn. Cook covered for 5 minutes or until the chikn is tender.
4. Top with Avocado, Cilantro, Salsa.
